Ligurian inspired greens tart

Proper regards to Lorenza de' Medici's "Italy, the beautiful cookbook" and Joyce Goldstein's "Enoteca". But in the end, this was mine. And pretty good too.

3 cups flour
3 eggs
1/4 cup olive oil plus some for the pan
1/4 cup water
1/4 cup dried porcini mushrooms
1/3 cup raisins
1 onion - diced
2 bunches fresh spinach - washed, stems cut off, lightly chopped
1/4 cup pine nuts
1 tsp herbs de Provence
1/2 cup ricotta cheese
Salt and pepper

Tart pan or deep pie dish, generously buttered.
Large non stick skillet

Prep
1) soak the mushrooms in just enough hot water to cover.
2) soak the raisins separately in hot water
3) Preheat oven to 350 degrees

Tart Dough
1) put the flour on a countertop and make a well in it.
2) add 1 if the eggs, a pinch of salt and 1/4 cup of the oil. Mis inside the well.
3) add the water slowly to make a dough that is a bit soft. Form into a ball a nd pit in in a bowl. Cover with a damp cloth and let it rest while making the filling.

Filling
1) Toast the pine nuts until just beginning to color in the pan. Remove the nuts to cool.
2) In the same pan, add 1-2 Tbl of olive oil and saute the onions until translucent
3) Add the spinach and stir until wilted.
4) Remove the mushrooms from their water and chop. Add the mushrooms and 2-3 Tbl of the soaking liquid to the spinach.
5) Remove the raisins from their water and add to the spinach. Add 1 Tbl of the raisin soaking liquid as well.
6) Add herbs
7) Turn heat to low, cover lightly and cook for 7-10 minutes.
8) While spinach is cooking down, whisk remaining 2 eggs in a small bowl.
9) Add ricotta to eggs and mix well.
10) Turn off spinach and remove from heat.
11) Add ricotta, egg & cheese mixture, and pine nuts. Stir well and let cool at room temp.

Putting it all together
1) Roll dough out and place in tart pan.
2) Remove filling from saute pan, leaving most of the liquid behind. Do NOT squeeze out the liquid from the greens, just let what falls off stay in the pan.
3) Place filling in the dough.
4) Add salt and pepper to taste
5) Bake for 40 minutes
6) Let cool slightly and serve.

Thoughts on variations:
- Use other greens (escarole, chard, etc.)
- Try escarole and a 1/2 cup of frozen peas instead of the spinach.
- Replace ricotta with a quick béchamel, or with an equal amount of parmesan

Asparagus Risotto

1 bunch asparagus, rinsed, tough ends snapped off, cut into 1” pieces 2 Tbl olive oil 6 Tbl unsalted butter 1 onion, finely diced (or shallots) 1 1/2 cups arborio rice 1/2 cup dry white wine 5 cups of broth (veg or chicken), hot 3/4 cup Parmesean cheese salt pepper Blanch asparagus for 1 minute in boiling, salted water. Rinse under cold water until cool to the touch. Heat olive oil and 2 Tbl of butter in a medium pan until butter no longer spatters Add onion and sauté until translucent Add rice and sauté for 1-2 minutes until rice has absorbed most of the fats Add white wine and sauté until rice has absorbed most of the wine and liquid no longer appears on the bottom of the pan when you stir it. Begin adding the broth 1/2 cup at a time. Stir very frequently until liquid no longer appears on the bottom of the pan, then add the next 1/2 cup. Cauliflower and Carrot Soup

1 medium onion 3 cloves of garlic, peeled, sliced thinly 1 lb carrots, washed and roughly chopped 1 Tbl coriander seeds, toasted 1 head cauliflower, washed and roughly chopped 6 cups of vegetable broth (chicken broth would work as well) Salt Pepper Thick Yogurt (greek style) Hot sauce of choice (Siracha, other) 1) Saute onions until soft and just beginning to color. 2) Add garlic and saute for 30 seconds 3) Add carrots, coriander and broth. Simmer for 15-20 min until carrots are just soft. 4) Add cauliflower and simmer for 10 min until soft. 5) Blend until smooth 6) Re-heat. Add salt and pepper to taste. 7) Ladle into bowls, top with tablespoon of yogurt dotted with hot sauce.
